K-Lo,
 A better answer is probably because usually the hands we see on TV are head to head. Consider a multi-player situation with all players moving their cards into the center of the table. I'd hate to have to read hands and keep them separated.

 I will agree that the modern trend accepts the procedure you describe, but that's where the problems come from, and the procedure is incorrect.
